Lower quality eggs also tend to be pressed without peeling from the connective tissue sac. The best pressed caviar (weak caviar grains that are not suitable for making grainy caviar) is uniform in color, consistency and salinity . Caviar has a pleasant, lightly salted taste and a unique, very expressive aroma. Pressed caviar contains 4.5% salt, 40% moisture. It is available in pre-packaged form – in tin boxes, glass jars.
